Peanut Butter FREE No bake cookies

So this is the no-bake cookie recipe I grew up with. It's my favorite, people usually put in the PB with out coconut and I started to search for this recipe online and never found it!  I have never seen this PB free recipe anywhere and luckily my mom still had this one.

NO BAKE COOKIES
3 c rolled oats
2c sugar
1 c coconut
6 Tbsp cocoa powder
1/2 c butter
1/2 c milk
1 tsp vanilla
Mix oats, coconut and cocoa
Heat butter, milk and sugar, boil for 4 minutes, stirring.
Remove from heat, add vanilla
Pour wet mixture over dry mixture, stir, cool slightly if you want to use your hands to make
balls . Otherwise  spoon onto pans or plates. Put in fridge until cold. We have also just put them on
wax paper on the counter and let them sit until cool.

Zuchini Fruit Snacks

Zucchini Fruit Snacks


Ingredients
10-12 cups peeled, seeded zucchini cut into 1/2 inch to 1 inch pieces (this recipe is perfect for the HUGE zucchini that you find hiding under one of the leaves) :)
3 cups water
2 packages unsweetened Kool-Aid, any flavor (I’ve found grape and strawberry work best)
2-1/2 cups sugar


Directions
  • Peel zucchini very well. Make sure that you get all the green off. Cut into large pieces and scrape out the seeds, Then cut zucchini into smaller ½ - 1 inch pieces. Mix water, Kool-Aid and sugar in a large pan and bring to a boil. Add zucchini and bring to a full boil. Simmer 25 minutes, stirring occasionally. Do not over cook.
  • Drain well (you can save the juice for another batch if you desire).Put pieces on dehydrator trays, being careful that they don’t touch. Dry 14-18 hours at 125 degrees.(My dehydrator doesn’t have a temperature setting- it’s old-- so I end up drying it for close to 20 hours). I’ve also successfully done this in the oven with it set at 170 and it takes about 10 hours.
  • Roll pieces in sugar after about 14 hrs in the dehydrator (while pieces are still kind of sticky). Return to dehydrator until dry.  
  • If you are using leftover juice to make another batch, add an additional package of Kool-Aid and 1/2 cup sugar. Store in airtight container.

CRAZY CAKE

The BEST Chocolate Cake you'll ever eat....EVER! we use it EVERY SINGLE BIRTHDAY since we got the recipe because it's the best!

3c flour
2c Sugar
1/2 C cocoa
2tsp baking soda
1tsp salt
mix 1C oil with 2 1/2 c water
2 tsp vinegar
add to dry mix
blend
pour into greased 9x13 pan  bake at 350* 40 min

Navajo Taco's

ok so whenever I make my award winning chili I save a tupperware full and freeze it. {to use on the navajo taco's} Then when I want them I just take rhoades rolls dough defrost in the fridge so they don't rise, flatten them and deep fry {this is called a scone lol} then put on chili, cheese, sour cream and lettuce salsa etc. Then for dessert we eat a honey butter scone :)

This is a good one, corn, {we like white sweet corn} black beans, cilantro, tomatoes and salsa. Then eat with chips.

Chicken fruit salad

This rainbow pasta was too fun to not buy! I really like this refreshing pasta salad in the summer. here is the ingredientsI usually put in mine, coleslaw dressing, Bow tie pasta, shredded chicken, purple grapes, almonds, craisens, poppy seeds,{would be good with shredded spinach}

Tina's BLT

This may look good to you and it may not. It's a BLT salad sandwich and actually really yummy! You take all the ingredients for a BLT and chop it up this one has orange and red tomatoes, Spinach, bacon, and ovocados all misxed up and you put it on your sandwich bread its great. Also If you like Ovacado it makes a GREAT substitue for mayo anytime. It's flavorful and creamy.
